Pretty Mini Cakes For All Occasions

There is something cute about seeing things in miniature size. With this in mind - with these mini cakes there is also a not so naughty but nice element to them, with the added pleasure of eating a cake but not feeling as though you’ve eaten loads to feel guilty.

With this weeks tutorial, I wanted to take into consideration, the current global problem, with numbers at events having to be down sized. The cake or dessert, normally made for larger servings doesn’t have to go. These mini cakes are great bitesize delicacies to be served between 1 -2 people.

The really super thing about these mini cakes is that they can work for any occasion.

I did a tray bake of my Perfect Chocolate Cake and used 3 different size cookie cutters to cut out enough cake for 3 different designs. I decided to used my Whipped Ganache (and some raspberry jam) to cover and fill some of the cakes, the cake with sprinkles I used my Chocolate Ganache Buttercream with raspberry jam. I know sounds delicious right! You can use use buttercream as well, if you want to give these cakes a try. I was just going for a double chocolate.

I wanted to keep the designs simple and rustic at the same time. The diagonal detail and the unfinished edge on the 3 tier cake and the watercolour and gold splatter effect on the 2 tier cake are great ways to use easy surface texture, but look really effective.

Who doesn’t like sprinkles? The sprinkle cake is a cute little dream. If I received this mini cake for my birthday, I would be grinning with joy from ear to ear! A delicious cute mini birthday cake, covered in sprinkles for me to eat all by myself! Ah, bliss!

I am originally from the UK but now live in Thailand. I owe all of my baking skills to my Mum; as a child I remember spending every Saturday with her whisking up yummy creations.

I spent ten years in Buying & Fashion Production, then made the switch into the wonderful world of baking and cakes 16 years ago. During this time, I have had the amazing privilege to teach and train others in the UK and Thailand.

I love seeing others reach their full potential, gain self-confidence, and achieve life-changing results through creative arts.
